The Extra Virgin Olive Oil Tradizione by Viola is produced from the varieties of moraiolo, frantoio, leccino and other minor varieties of olives. Plants grown on stony and very permeable calcareous soils, placed at an ideal altitude for cultivation; parsimonious in the form and production of the fruit; cure and touch only by the hands of man.
Aroma:
it is ample and rich of vegetal notes of artichoke, field herbs, basil and rosemary. A bitter and spicy well expressed and well balanced.
Taste:
the taste is fine with sensations of thistle and mint with spicy hints of black pepper and almond in the finish.
Uses:
multiple uses in the kitchen, base for cooking and creaming of pasta and rice in a pan, marinated tuna, molluscs au gratin and vegetable soups. Ideal with grilled radicchio, pinzimonio, artichoke salad with flakes of Parmesan, meat sauce and fried fish.
