The Extra Virgin Olive Oil Il Sincero Viola is a monocultivar of 100% moraiolo. It is a choice linked to the territory; centuries-old trees of modest size linked to stony and steep soils, grown at 400 meters above sea level and cultivated according to tradition. The round fruit, harvested by hand from the plant during octobering, gives life to an extra virgin of extraordinary intensity that conveys unmistakable varietal sensations.

Aroma:

to the smell it is wide and decisive, rich in vegetal notes of thistle and wild herbs with balsamic hints of mint, basil and rosemary.

Taste:

a strong, intense and enveloping taste, characterized by vegetable tones of thistle, wild herbs, black pepper and almond on the finish. Decisive bitter and strong spicy.

Uses:

its strong taste and its structure enhance bean soups and chickpea creams with toasted bread; excellent on pork fillet with lard and salads of field vegetables. Excellent with skewered game, jugged hare, roasted pigeon breast with sweet pepper sauce. It goes well with aged cheeses, ideal on orange and mandarin sorbets.
