The Red Carmignano DOCG The Farnete Pierazzuoli is born from the selection of the best Sangiovese (80%) and Cabernet Sauvignon (20%). And ‘the only DOCG in Italy where it is mandatory the use of Cabernet Sauvignon, because thanks to the history of the Medici, Carmignano was born from the blend of Sangiovese and French grape that was the Cabernet Sauvignon. The grapes are fermented separately in stainless steel tanks at controlled temperature, as they have different aging times. After malolactic fermentation, made of steel, Sangiovese and Cabernet Sauvignon are blended and placed to mature in French oak barrels of medium-aged for a minimum of eight months. After bottling, the Carmignano remains in bottle for a further eight months. It serves in glasses for red bodied at 18 ° C.
