The Extra virgin olive oil DOP Colline Assisi Spoleto Marfuga is cold extracted from olives collected only for ‘stripping’ by hand in the olive groves that stretch properties in Trevi and Campello, in the heart of Umbria, a ‘traditional production area for the cultivation of olive trees. From Moraiolo Frantoio and Leccino cultivars it is extracted an olive oil green color, fruity and fragrant.
Aroma:
the intensity of the olfactory herbaceous character, distinct notes of bitter and spicy and fruity and fragrant aroma of fresh grass is mainly given by the Moraiolo variety of olives.
Taste:
fresh and clean flavor, very herbaceous with a pleasant bitter and spicy charge of medium intensity, persistence of vegetal notes dominated by herbaceous feeling of artichoke and almond sour.
