The Extra Virgin Olive Oil Pdo Teatine Hills subarea Vastese by La Selvotta is manufactured using olives: 45% NEBBIO that give harmony and balance to the blend, 40% LECCINO that give freshness, and 15% GENTILE for richness and structure. The conversion occurs few hours after the harvest in order to intensify the organoleptic peculiarity.
Aroma:
to the smell it is perceived complex and exquisitely refined, featured by vegetal notes of swathed grass, lettuce/valerian and artichoke with an isolated marine freshness note.
Taste:
to the taste the herbal sensation is celery, sweet almond, enriched by notes that remind of the fresh pod of the pea. Bitter and a hint of pungency are beautifully determinate, balanced.
