Local variety that thanks to its high resistance to low temperatures, circumscribes the ‘murgiana’ area of Alberobello, Locorotondo and a part of the ‘Valle D’Itria’ at the altitude of 400mt. The manufactured oil is featured by a complex flavour to the smell and to the palate by a determinate pungency.
Aroma:
medium fruity which immediately releases sensations of green apple and grass.
Taste:
pungent at a first sight, than notes of bitter attributable to grass and almond.
