The Traditional Balsamic Vinegar of Modena PDO I Solai is made of cooked grape must, matured by slow acidification derived from a natural fermentation and progressive concentration by a long aging. The must is made exclusively from grapes Trebbiano ‘di Spagna’ and Lambrusco ‘salamino’ from Santacroce. It is aged over 12 years.
Uses:
Ideal on Parmesan long seasoning; goes well with complex and flavorful meat dishes, but also on raw meat or foie gras.
