The Extra Virgin Olive Oil Coevo Ravece organic by Case d’Alto is an organic extra virgin olive oil produced from olives grown on the hills of Flumeri (AV) at an altitude of about 500 meters, an ideal place, from a climatic and landscape point of view. The Ravece olive variety is highly regarded for its bitter and spicy notes, two indicators of quality that Ravece has more than other cultivars. The period chosen for the harvest coincides with the first ten days of October, that is, in advance of what is foreseen by tradition. If on the one hand this choice penalizes the yield, on the other it allows to enhance the properties of the extra virgin olive oil produced.
Aroma:
highly intense fruity with marked herbaceous notes, green tomato leaves and artichokes.
Taste:
complex taste with notes of tomato, artichoke and wild chicory; bitter and spicy of medium intensity but with a long persistence of spicy.
Uses:
bruschetta with tomato, legume and minestrone soups, carpaccio and grilled meat and fish.
